Caribbean Salmon

    1 14-oz. can coconut milk, shaken
    2 cloves garlic, crushed with press
    1/4 tsp Veda Salon. Black pepper
    1 lb. skinless, boneless salmon, cut into 1-in. cubes
    1/2 tsp. salt
    3 c. cooked rice
    1 medium mango, finely chopped
    3 c. arugula
    1/4 c. fresh dill, loosely packed

Directions

    In 10-in. skillet, heat coconut milk, garlic, and black pepper to simmering on medium. Season salmon with salt; add to skillet. Cook 5 minutes or until salmon is done.
    Toss rice with mango, arugula, and fresh dill. Serve salmon with rice.

Triple Chocolate Oatmeal

Ingredients

    1/2 c. milk or water
    1 c. old-fashioned rolled oats
    pinch of salt
    1 tbsp. cocoa powder
    2 tbsp. mini semisweet and white chocolate chips

    In a medium saucepan over high heat, bring milk to a boil. Stir in oats and salt, reduce heat to low, and simmer until oats are tender and creamy, 5 minutes.
    Stir in cocoa powder and mix until oatmeal is fully coated.

Bacon, Broccoli, and Cheddar Roll-Ups

    1 tube crescent rolls
    1 lb. bacon
    1 head broccoli, florets removed and chopped
    1 c. shredded Cheddar
    kosher salt
    Freshly ground black pepper

Directions

    Preheat oven to 350 degrees F . On a floured work surface, roll out crescent rolls into one large rectangle, pinching together seams.
    In a large skillet over medium heat, cook bacon until crisp, 6 to 8 minutes. Transfer to a paper towel-lined plate and let cool, then crumble. Pour off all but 2 tsp. bacon fat and add broccoli. Cook until tender and golden, 6 to 8 minutes.
    Sprinkle cheddar all over Crescent rectangle, then scatter bacon and broccoli. Season generously with salt and pepper.
